Baked Feta with Citrus & Olives

This crowdpleaser will get so much use, you'll learn the recipe by heart! 

Ingredients

1 orange sliced

1 package Big Picture green amfissa olives, whole

⅔ cup extra-virgin olive oil

1 block feta cheese

Freshly ground black pepper

Pinch of crushed red-pepper flakes

¼ cup fresh dill, torn or roughly chopped

Whole-wheat pita or flatbread, toasted, for serving

Instructions

  1. Preheat the oven to 400°F. Slice the citrus (oranges shown here) into thin rounds. Drain the olives (keeping the brine for other recipes!). Drain the feta, pat dry with a paper towel and slice in half. Layer the oranges and olives in an 8-inch baking dish and drizzle generously with half of the olive oil. Nest the feta into the olives and oranges, use remaining oil; sprinkle with black pepper and red-pepper flakes.

  2. Cover the baking dish with aluminum foil and bake until warm (8-10 min).

  3. Remove the dish from the oven, warm 2 tablespoons honey in the microwave for 15 seconds, or until it’s loosened up a bit. Brush the top of the feta with honey and broil until brown and bubbly, 1 to 2 minutes.

  4. Set out a small bowl for the olive pits and serve while warm, with flatbread or crackers on the side.
